“Carso”, the name means “stone”: in fact is the stone the protagonist of the karst landscape. Eroded stone, excavated, modeled. Stone that raises on the steep bastions, that plunges in the sea cliff, shattered in the stony, recomposed in long rows of stone walls that form geometries without apparent order. Along with stone water: water that erodes, digs, models, draws, giving rise to particular erosion that create the landscape on the surface, with sinkholes, chasms and underground, with thousands of caves that penetrate into the subsoil sometimes for kilometers.

This is not all, the “Carso” is also witness and depositary of a memory of pain: for almost three years during the First World War, Austrian and Italian soldiers faced each other in bloody battles on its stony ground.

Little places are so full of history and suffering as the modest Carso reliefs, it is like an archive that preserves the memory of broken lives in their fullness, sacrificed to logic did not consider that nothing or almost their existence.

Following the paths of the “Carso” means making a kind of pilgrimage, not only see the places, but evoke the suffering and the courage and heroism of those who fought here and feel invaded by a feeling of deep respect but also of simple affection for all those who have been overwhelmed by a great destiny.

In the present the “Carso” is a small world full of natural singularity, with landscapes that follow each, mysterious scrubs, quiet rural villages, dizzying views of the Gulf of Trieste, secret corners to explore with patience and curiosity, leaving accompany the lazy streets that cross it.

The surly nature of the places did not prevent the cultivation of the wine in small plots or in the terraces that slope down towards the sea, and olive, where the climate is milder. And to breed cows, goats, sheep, getting fine cheeses. The Karst is a meeting point of various cultures and cuisine is affected: the Veneto-Friuli tastes intersect, merge and combine with those Austrians and Slavs. Everyone has left some trace, some contemporary taste or smell and keep them combining them as they please.
At the end of the route Trieste, with its clear air and Argentina, the light almost Nordic, industriousness of the port, the placid monumentality of its buildings. Trieste meeting place of peoples, religions and nations, central-european city in style and culture.
